Tofu is a very underrated ingredient but its secret is that it provides not only calcium but also iron and protein, and it can be super tasty.
This dish is so simple to make, nutritious and a great alternative to scrambled egg. You can even achieve that egg like taste by using a pinch of black salt.
Here's how to make it.
1 tsp vegetable oil
A packet of firm tofu (like Caldrons)
1 clove garlic crushed)
1 tbsp nutritional yeast
½ tsp turmeric (for colour)
Gently fry the garlic in the oil until golden.
Roughky break up the tofu with a fork and add to the pan.
Add the nutritional yeast and tumeric and mix everything together.
Heat to warm through for approximately 3-5 minutes and serve.
This recipe is ideal on toast or alongside a cooked breakfast.
