Pan Haggerty

Also known as Potato Bake, it's a traditional British food from Northumberland. It takes less than 30 minutes to cook and caters for 6 people.


1 tbsp Veg Oil

6 Finely Sliced Potatoes

2 Shredded Leeks or Onions

6 Carrots Thinly Sliced

500ml of Veg Stock

150g of Vegan Cheese

Salt and pepper

Sweet Paprika


Heat the vegetable oil in an ovenproof pan.

Arrange a layer of the sliced potatoes in the bottom of the pan.

Cover the potatoes with a layer of sliced leeks or onions, then a layer of sliced carrots.

Season with salt and freshly ground black pepper.

Repeat the process with the remaining potatoes, leeks/onions and carrots, finishing with a layer of potatoes on top. Season with salt and pepper.

Cook all the ingredients with vegetable stock, then bring to the boil.

Cover the pan and reduce the heat to a simmer.

Simmer for 15–25 minutes, or until the potatoes and carrots are tender.

Preheat the grill to high.

Uncover the pan and sprinkle over vegan cheese and dust with paprika.

Grill for 5–6 minutes, or until the cheese has melted.

Serve with a crusty roll.
